Seenerisotto / Mushroom risotto


Hing ihkas millegi mõnusa ja kreemise järele. Välja sai otsitud seene risotto. Originaalretsept pärit Vegie Food raamatust.

Seenerisotto / neljale
1,5l köögivilja puljongit
500ml valget veini
2spl oliivõli
60g võid
2 sibulat, viilutatud
500g seeni (mina kasutasin šampinjone)
500g risotto riisi
75g Parmesani, riivitud
palsamäädikat serveerimiseks
Parmesani laastud serveerimiseks

Kuumuta puljong ja vein potis keemiseni, siis hoia kuumana madalal kuumusel.
Kuumuta õli ja või suures potis. Lisa porru ning kuumuta, kuni sibul on klaasjas.
Lisa viilutatud seened ning kuumuta. Lisa riis ja kuumutakuni riis on läbipaistev.
Lisa 125ml puljongit ning kuumuta pidevalt segades keskmisel kuumusel, kuni kogu vedelik on riisi imbunud.
Jätka puljongi lisamist, 125ml kaupa kuni riis on pehme ja kreemine.
Lisa riivitud Parmesan ning kuumuta kuni juusts on sulanud.
Serveeri tilga palsamäädikaga ning Parmesani laastudega.

I wanted something tender and creamy. So I found this yammy mushroom risotto. Original recipe is from Vegie Food.

Mushroom risotto / Serves 4
1,5l vegetable stock
500ml white wine
2tbs olive oil

60g butter
2 onions, sliced
500g mushrooms, sliced
500g arborio rice
75g Parmesan cheese
balsamic vinegar, to serve
shaved Parmesan, to garnish
Place the stock and wine in a large saucepan, bring to boil, then reduce the heat to low, cover and keep at a low simmer.
Heat the oil and butter in a large saucepan. Add the onions and cook for 5 min undil soft.
Add the mushrooms and cood 5 min until soft.
Stir in rice until it is transcluent.
Add 125ml stock, stirring constantly over medium heat until the liquid is absorbed.
Continue adding more stock, 125ml at a time, stirring constantly for 20-25 minutes until all the stock is absorbed and the rice is tender and creamy.
Stir in Parmesan until it is melted.
Serve drizzled with vinegar and top with Parmesan shavings.
